Whetting steel, 36 cm Sharpening steel is required to maintain the cutting quality of a knife. Drawing the knife across the sharpening steel re-straightens the fine cut of the blade and a sharp cut is maintained. The best thing to do is draw both sides of the knife across the sharpening steel before each cut. A simple description of this can be found on the packaging.
