Sometimes mistakenly called a sharpening steel, the Kershaw Steel isn't about sharpening, it's about honing. The thin, sharp edge of a properly sharpened kitchen knife will naturally bend over after a certain amount of use. While this micro bending won't be visible to the naked eye, it does affect the blade's cutting performance. Because the edge is slightly turned to one side, you're not cutting with the actual edge of the blade and so the blade seems to be duller than it really is. The Honing Steel gently realigns the edge, unbending it and returning your knife to its best performance.

To use the Kershaw Honing Steel, draw the entire length of one side of the edge of the blade across the steel several times. Then draw the other side of the blade across the steel an equal number of times. Doing this once a week will extend the time between sharpenings—and make food preparation a more pleasurable experience.
