Out of focus specular highlights (bright points of light like street lights) will take on the shape of the hole in your aperture disk. Lights lining the expanse of a city bridge suddenly turn into hundreds of tiny stars, instead of little dots of light.

This effect also works in more subtly lit situations. A photo of a woodsy scene can appear to have a star pattern when shooting with a star aperture disk, if the light is shining through lots of leafy trees.
